G&T Tacos

Recipe Notes

A pre-mixed G&T will work just as well as your own mixed G&T. Use whatever you have at your disposal.

Ingredients

G&T CHICKEN STRIPS

  • 700g Mt Barker free range chicken breast fillets
  • 330g Flour
  • 330ml Gin and Tonic*
  • 10g Baking Powder

CUCUMBER & MINT SALSA

  • 1 Whole cucumber
  • 5g Fresh Mint
  • 20g Fresh pomegranate

ONION SALSA

  • 50g Red onion
  • 100g Spring onion

AVOCADO, LEMON AND LIME MAYO

  • 50g Avocado
  • 50g Mayo
  • 1 tbsp Fresh lemon juice
  • 1 tbsp Fresh lime juice

Method

G&T CHICKEN STRIPS

  1. Cut chicken breasts into chunky-like strips; 2-3cm in thickness
  2. Coat in seasoned flour
  3. Heat oil to 180°C
  4. Deep fry strips for 4-5 minutes
  5. Take them out of the oil and let the excess oil soak off into a paper towel

CUCUMBER & MINT SALSA

  1. Chop up cucumber into small salsa style cubes.
  2. Mix all ingredients together

ONION SALSA

  1. Julienne spring onions and place them in ice cold water until the start curling
  2. Dice red onion
  3. Strain spring onions and add your diced red onion and mix

AVOCADO, LEMON AND LIME MAYO

  1. Blend the avocado and mayo together
  2. Add in your lemon and lime juice and stir
