Roasted Carved Chicken & Caesar Salad
Ingredients
For the Salad:
- 1 large romaine or coz lettuce, chopped
- 1/2 cup croutons
- 1/4 cup grated Parmesan cheese
- 200g Mt Barker Roasted Diced Chicken Breast
- 2 -3 soft boiled eggs
- 2 crispy cooked rashers of bacon
For the Dressing:
- 1/2 cup mayonnaise
- 1/4 cup grated Parmesan cheese
- 2 tbsp lemon juice
- 1 tbsp Dijon mustard
- 1 garlic clove, minced
- 4 anchovy fillets, minced
- 1 tsp Worcestershire sauce
- Salt and pepper to taste
- 1/4 cup olive oil
