Roasted Carved Chicken & Caesar Salad

Ingredients

For the Salad:

  • 1 large romaine or coz lettuce, chopped
  • 1/2 cup croutons
  • 1/4 cup grated Parmesan cheese
  •  200g Mt Barker Roasted Diced Chicken Breast
  • 2 -3 soft boiled eggs
  • 2 crispy cooked rashers of bacon

 

For the Dressing:

  •  1/2 cup mayonnaise
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp lemon juice
  •  1 tbsp Dijon mustard
  • 1 garlic clove, minced
  • 4 anchovy fillets, minced
  • 1 tsp Worcestershire sauce
  • Salt and pepper to taste
  • 1/4 cup olive oil

Method

1. Prepare the Dressing:
– In a medium bowl, whisk together the mayonnaise, grated Parmesan cheese, lemon juice, Dijon mustard, minced garlic, minced anchovy fillets, Worcestershire sauce, salt, and pepper.
– Slowly drizzle in the olive oil while whisking continuously until the dressing is smooth and creamy. Adjust seasoning to taste

2. Prepare the Salad & Eggs
– Wash and chop the romaine/coz lettuce into bite-sized pieces.

   -cook and cool soft boiled egg
  
3. Assemble the Salad:
– In a large bowl, toss the chopped romaine lettuce with the prepared dressing until evenly coated.
– Add the croutons, grated Parmesan, crispy bacon, chicken and toss gently to combine.

4. Serve:
– Transfer the salad to a serving platter or individual plates.
– Top with ½ or ¼ soft boiled eggs

   – Sprinkle additional Parmesan cheese and some anchovy fillets on top if desired.
